Double Stuffed Potatoes
Yield: 40 pieces
20 Each Medium Redskin Potatoes
Oil Potatoes and Sprinkle with Kosher Salt.
Bake whole potatoes at 350 degrees for about 40 minutes.
Cool in refrigerator
1 Cup Bacon Bits
2 Cups Shredded Cheddar-Jack
1 Lb Sour Cream
1 Cup Chopped Green Onion
Cup Chopped Roasted Garlic
1 tsp Smoked Paprika
All Scooped Potato Inerts
Salt and Black Pepper to taste
After roasting the potatoes and they have cooled completely, half all potatoes. Slightly trim rounded top/bottom to make it flat enough so the potato will stand upright. Scoop insides of the halved potatoes(what would have been the middle) with a melon baller or spoon to create a good sized cavity to stuff. Add the scooped potatoes to the rest of the ingredients and mix thoroughly. Stuff prepared potato shells with a pastry bag or large ziplock bag with corner cut out. Arrange stuffed potatoes on a greased lined sheet tray. In a pre-heated 325 degree oven, bake the potatoes for approximately 12-15 minutes or until heated through to an internal temperature of 165 degrees let stand for 5 minutes, garnish with smoked paprika and serve.
Savory Stuffed Fillo Shells
Yields: 30 pieces
2pkgs Mini Fillo Shells(15count)
2pkgs 8oz Sliced Crimini Mushrooms
2ea Vidalia Onion, julianned
8 oz Sundried Tomatoes (rehydrated), medium dice
2 Cups Smoked Gouda Cheese, shredded
Cup Chopped Fresh Parsley
1 Tbsp minced Garlic
4oz Olive Oil
2oz White Wine
TT Kosher Salt(To Taste)
TT Cracked Black Pepper(To Taste)
1 ea Balsamic Glaze
To begin remove the fillo shells from the package and arrange on a sheet tray. In a preheated 350 degree oven, par bake the shells for 3-4 minutes until lightly golden(they will be baked again so do not over brown them). Remove from oven and let cool. Next in a large saut pan over medium low heat, add the 2oz olive oil, julienned onion, and a pinch of salt. You will want to cook the onions slowly as to not burn them, when they are done they should be a light caramel color. Using a bit of water to control the temperature and release the fond or browning on the bottom the pan will help the onions gain color and flavor. Be sure to cook off the majority of any liquid that forms in the cooking process, the onions should be au sec or almost dry. When finished allow the onions to cool. While waiting on the onions to caramelize, in a separate saut pan over medium high heat add 2oz olive oil, the sliced Crimini Mushrooms, and minced garlic. Toward the middle of the cooking process add the 2oz of white wine to deglaze the pan and add another element of flavor. Cook the mushrooms until au sec or almost dry. Add the diced sundried tomatoes to the mushrooms and mix trough let this mixture cool as well. Once both the onions and the mushrooms are cooled, mix together in a medium mixing bowl. Add the Smoked Gouda Cheese and parsley to the mixture and incorporate everything evenly. Season the mixture with Salt and Pepper to taste. Using a teaspoon, scoop even amounts of the mixture into the fillo shells. In a pre heated 325 degree oven, warm them through until the cheese melts and the mixture is hot approximately 6-8 minutes. Let stand for 3-4 minutes finish with balsamic glaze and serve hot.
